Almond Butter Breakfast Muffins

It's tea time. The perfect healthy almond and blueberries muffins bite, while enjoying a warm cup of tea with your favourite book

 

Ingredients:

- 80g Almond nut butter
- 200g Plain Yoghurt
- 1 ripe banana
- 1x large egg
- 1 tsp vanilla extract
- 120g honey
- 250ml flour of your choice
- 50g rolled oats
- 1 tsp baking powder
- 2,5ml baking soda
- 2,5 ml salt
- 65g blueberries
- 75g dates, chopped

 

Instructions:

Preheat the oven to 160 C

Put almond butter, yoghurt, banana, egg, vanilla and sugar into bowl and beat well. Stir in the flour, oats, baking powder, baking soda and salt until just combined. Stir in the blueberries and dates.

Spoon the batter into muffin cases or muffin tray to about three-quarters full. Sprinkle each muffin with topping of your choice. (seeds, almond flakes)

Bake for 20-25 minutes until cooked. 
Store in an airtight container.
