Macadamia Overnight Power Oats

Overnight power oats

The perfect energy-boosting breakfast that can easily be assembled the night before. Perfect for lunchboxes as well.

Preparation time: 10 minutes + overnight refrigeration

60ml (¼ cup / 40g) rolled oats

1 Roasted Macadamia squeeze pack

45ml (3 tbsp) sunflower seeds

15ml (1 tbsp) chia seeds

15ml (1 tbsp) coconut sugar

10ml (2 tsp) dried goji berries

180ml (¾ cup) milk

Combine all of the ingredients in a large glass, bowl or jar. Stir until smooth, cover and refrigerate overnight. Serve cold.

TIP: The overnight oats is delicious plain but can also be topped with a dollop of double cream yoghurt and some seasonal fruit, if preferred.

TIP: For a vegan breakfast, simply replace the milk with almond or coconut milk.

TIP: For a gluten free breakfast, simply replace the rolled oats with gluten free oats.
