Nutty banana muffins
A quick and easy healthy muffin recipe – perfect for kids and adult lunch boxes.
Preparation time: 10 minutes
Cooking time: 20 minutes
375ml (1½ cup) wholewheat flour
250ml (1 cup) bananas, mashed
125ml (½ cup) buttermilk
125ml (½ cup) ButtaNutt Roasted Macadamia nut spread
125ml (½ cup) brown sugar
45ml (3 tbsp) sunflower oil
5ml (1 tsp) vanilla essence
5ml (1 tsp) baking powder
2 large eggs
Pre heat the oven to 170°C and line a muffin tin with 12 cupcake liners. Combine all of the ingredients in a food processor and blend until smooth. Spoon the mixture into the lined tin, filling the cups ⅔’s of the way up. Bake the muffins until golden and cooked through, 16-18 minutes. Leave the muffins in the tin for 5 minutes before transferring to a cooling rack.
TIP: For some extra nuttiness, sprinkle a few chopped raw macadamia nuts over the muffins before baking.
